Recipe - Mini Egg Custard

5 eggs
2 cups Milk
1/2 cup self-rising flour
1/4 cup margarine, melted
1 cup sugar
1 teaspoon vanilla

Combine all ingredients in a blender. Blend together thoroughly. Pour mixture into a greased mini muffin pan. Bake at 350 degrees 25-30 minutes or until set.

(I used a Freshware 20-Cavity Silicon Mini Tartlet Pan - ordered from Amazon.com)

9" Pie - Pour Mixture in a 9" greased pie plate. Bake at 350 degrees 45 minutes -1 hour or until set.
To make Coconut pie add 1 cup coconut.
